Flaked Salmon Salad with Black Beans and Broccoli

It is a 4 people serving and can easily be prepared in 20 minutes to the maximum. With less calorie count and a complete nutritious diet, Flaked Salmon salad with Black Beans and Broccoli is irresistably delicious.


For Dressing you need:

1 tablespoon extra-virgin olive oil
1/4 cup fat free vinaigrette
Juice of 1 large lemon
1 teaspoon mustard

For Salad you will require:

12 ounces boneless salmon fillet
2 cups of chopped broccoli
1 15.5-ounce canned black beans (drained and well-rinsed)
1 cup tomatoes, halved
Salt to taste
Black Pepper according to your need
4 cups torn assorted salad greens (trimmed, washed, and dried)
1 bunch fresh basil (washed)
2 carrots, peeled and cut into long strips


Beat together olive oil, vinaigrette, lemon juice, and mustard.

Preheat oven to 400°F. Put your salmon in a small pan and cook for approximately10-20 minutes, depending on how thick is your fish. Once cooled, flake the salmon into bite-able pieces using a fork.

In the meantime, take two cups of water and boil it in a sauce pan. Add broccoli and boil for 1 minute or until florets turn bright green. Drain the water and let cold water run over it for some time. After draining the water properly, put it in a large bowl and add the previously made dressing and toss well.

Take another bowl and mix together bits of salmon black beans, and tomatoes. Add salt and pepper. Take the salad greens and basil and divide them in 4 plates. Crown it with broccoli and salmon mixture and dress up with peeled carrot strips.
