Brussels Sprout Salad Recipe
1 1/2 pound fresh brussels sprouts
3 tablespoons of extra-virgin olive oil
2 – 3 tablespoons of fresh lemon juice
1 teaspoon of thyme
1/3 cup fresh chives and mince them
2-3 big pinches of salt or according to taste
1 1/3 cups hazelnuts, crushed and toasted
2 ounces of Parmese cheese
Carefully shred the brussels sprouts a sharp knife. Put these shredded sprouts in a large mixing bowl, add the olive oil, lemon juice, thyme, chives, salt, and hazelnuts and toss the mixture gently. If felt necessary, adjust the seasoning. You may add more lemon juice if required, keeping in mind, that the cheese you’ll add too has its natural salty taste. Finally, add the last ingredient, i.e, cheese and toss once or twice and there it is ready to be served.
